Bacon Cheddar Biscuits


MMMMmmmmm, here’s another quick and easy breakfast recipe, sort of a savory take on the famous scones.

This little monkey gobbled them up (though she did make me pick out the chives – “mommy i don’t like dat salad”). For the prudent dad I added jalapenos and he posed for us, ha.

Bacon Cheddar Biscuits Recipe

You’ll need some crumbled bacon, some cheddar, and if you have them in your backyard farm, green onions make a nice addition.

Ingredients:
2 cups flour
1 tablespoon baking powder
1 1/2 teaspoons salt
12 tablespoons) unsalted butter, cold and chopped or grated
1/2 cup buttermilk
1 egg
1 cup grated Cheddar
6 pieces bacon, cooked and crumbled
2-4 scallions, green parts only, thinly chopped
Directions:
Preheat the oven to 425 degrees F.
Whisk dry ingredients together. Add butter and blend with pastry blender or in an electric mixer until you have a meal with lumps about the size of small peas.
Beat buttermilk and egg. Add the buttermilk mixture to the flour mixture and mix just until combined. Do not overmix. Lightly coat cheddar with dusting of flour and add it along with bacon and scallions to dough until just distributed. Do not overmix!
Dump out onto a well-floured board and knead 6-8 times. Press dough flat and cut with biscuit cutter or floured rim of a glass.

Transfer to a sheet pan lined with parchment paper or silpat.

Lookin’ good…

Bake for 20 to 22 minutes, until the tops are lightly browned.

Serve hot!

Heck yeah you can add bacon to anything. My daughter got the Melissa & Doug sushi play set for Christmas and was instantly obsessed with sushi. She begged me to make it. From experience, I knew that the first time she had it, there needed to be something familiar…something beloved. And by jove… I put bacon in those sushi rolls.

Bacon, Bacon, Bacon!!! It goes in or around everything. We stuff halfed jalapenos with cream cheese, shredded cheese and spices. Then wrap it in bacon and brush on some bbq sauce. Then bake it at 375-400 degrees for 20-30 mins. Until the bacon is super crispy and the jalapeno has roasted. Yummy!

Mmm! Bacon. My favourite is to Add bacon to Fresh broccoli, add some raisins (or better yet, craisins) sunflower seeds and red onions. Top with slaw dressing. DELICIOUS!!!!!!!!!

Amazing. I love scones and biscuits, and my hubby loves bacon, so it's perfect for us. As for bacon, I recently found a recipe for BROWN SUGAR BACON WAFFLES–the most amazing breakfast ever–I'd never thought to insert bacon directly into the waffles! McGriddles were a flop, ya know? My 2 year old cries for bacon, and we often end up scrapping over the last piece on my plate. (Who wins depends on how hungry I am and how guilty she makes me feel)We will definitely be making these – bacon is always on the menu at our house!

My three year old hates chives as well. I have to make her her own portion of scrambled eggs, because the hubster and I both love them with chives. She also loooooves bacon! Any meat that looks tasty to her gets called either bacon, chicken, or burger. lol.

When I was pregnant I became OBSESSED with bacon. Which was fortunate for me because all of the hip and happening magazines and food shows were featuring bacon. Yum! Now that my baby is ten months old, I suppose I can't blame my bacon-itis on cravings anymore. I can tell you, though, that my greatest creation during pregnancy was my BACON APPLE PIE! We live in the South, so bacon is revered almost as much as apple pie. I only tried it once, and no one else liked it but me, but I'm dying to try it again and work out the appropriate bacon-apple-cinnamon ratio to make it INCREDIBLE!!

Made eggs and bacon for the hubby coming in after his run the other morning. Walked into the house saturated with the smell of bacon, gave me a kiss and said nothing is sexier than a woman who smells like bacon. Haha! Guess the way to his heart is definitely through his stomach.

Absolutely, add bacon to everything! Our church had a big open house/pot luck over Christmas time, and I made chocolate covered bacon for my contribution to the party. Everyone loved it. It was quite the conversation piece, everyone wanted to know how I made it, where the idea came from, will I make it again, etc. So, it was a lot of fun to have. People just didn't 'eat and run'! Even the kids loved it.
